Today I started my second attempt at sauerkraut. The first attempt was ok, but I didn't get the salt amount quite right. I could eat it, but it was a little more salty then I liked. I followed How to Make Sauerkraut. The one thing I did change was once I added the salt to the cabbage I set it a side for about thirty minutes before I started to squeeze the water out of the cabbage.
I will let you know how it turned out in couple of weeks.
